The basics: kombucha is tea fermented with a SCOBY, a symbiotic culture of bacteria and yeast. The good stuff is alive, meaning it contains active cultures responsible for most of the gut health claims. Not all kombucha keeps those cultures alive through the supply chain. Look for raw or unpasteurized on the label. Pasteurization kills the cultures that give kombucha its probiotic value. GT's Living Foods makes a point of this; their Synergy line is raw and unpasteurized. Health-Ade is also raw. Sugar content varies more than most people expect. Traditional kombucha starts sweet and ferments until much of that sugar is consumed. A shorter ferment means more residual sugar. Humm brews lighter and sweeter by design. GT's Synergy runs 3 to 5 grams per serving. Flavor profiles split into two camps: tart, vinegary styles preferred by longtime drinkers, and smoother, fruit-forward styles that work better as a soda replacement.
